SWEET POTATO BROWNIES

Ingredients:

  •  1 cup mashed sweet potato
  • ½ cup smooth nut butter of your choice (we recommend almond or cashew butter)
  • 2 tbsp maple syrup
  • ¼ cup cocoa powder
  • Handful of carob chips

Instructions:

  • Preheat the oven to 350 and grease a small cake pan
  • Melt nut butter with maple syrup on the stove
  • Mix the melted nut butter and maple syrup with the mashed sweet potato and cocoa powder in a large bowl
  • Fold in the chocolate chips
  •  Transfer the mixture into the greased pan and bake for about twenty minutes
  • Remove from the oven and let the mixture cool completely before slicing and refrigerating.
  • These brownies taste better when served cooled.

NOTE: These brownies are the best when cooled completely, so store in fridge or freezer.
